Welcome to my inaugural Food-Tastic Friday!

What is it you may ask?  Well, while trying to figure out some ideas to make the blog more fresh, and to get me blogging more again, I came up with the idea of doing something based on our weekly menu, recipes and food budget.  So Food-Tastic Friday is born.  I am hoping people will follow along and post their food-tastic menus and recipes and link up so we can all get some fresh ideas!   I know I can always use more ideas for feeding this big family of ours!

So, here are the rules:

  1. Post your weekly menu
  2. Post one recipe that you will be making.  It doesn’t have to be anything fancy! (you can put a picture up too)
  3. Link up down in the comment section and put a link to my blog post so everyone can get their culinary creativity juices flowing!

So with that, here’s my Food-Tastic Friday:

Menu:

Saturday ~ Oktoberfest Sausage, Baked Potato, Salad

Sunday ~ Thanksgiving Dinner ~ Roast Turkey, Sausage Stuffing, Mashed Potatoes, Gravy, Sweet Potatoes, Squash, Broccoli and Carrots.  Pumpkin Pie and Raspberry Apple Pie for dessert (Shane stopped in at the Big Apple on his way home from Ottawa this afternoon).

Monday ~ Thanksgiving Leftover Casserole and Veggies

Tuesday ~ Beef & Broccoli Stir-fry over rice

Wednesday ~ Spinach and Onion Quiche, Salad

Thursday ~ Mustard Chicken, veggies, Brown Rice

Friday ~ Baked Pasta with Veal

Our absolute favourite recipe to make with our leftovers is Thanksgiving Leftover Casserole.  I found the recipe at All Recipes.com a few years ago and we have it every time we make a turkey dinner.  Sometimes I think the family likes it more than the regular Thanksgiving feast.  This recipe is also on my recipe page.

Thanksgiving Leftover Casserole

Ingredients

  • 3 tablespoons Butter
  • 2 tablespoons All purpose flour
  • 12 ounces evaporated milk 
  • 1 cups Water
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Fresh ground pepper
  • 1/4 teaspoons Onion powder
  • 2 tablespoons Butter
  • 1 cups Dry bread stuffing
  • 1 cups Diced turkey meat 
  • 1 cups Shredded cheddar cheese
  • 2 cups Mashed potatoes

DIRECTIONS 
Pre-heat oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish.
Melt 3 tablespoons butter in a saucepan over low heat. Blend in the flour. Slowly stir in evaporated milk and water, then season with salt, pepper, and onion powder. Stir sauce over low heat for 5 minutes.
In a separate saucepan over low heat, melt 2 tablespoons butter. Blend in the dry stuffing mix. Place the turkey in the prepared baking dish. Pour the sauce over turkey, then sprinkle with Cheddar cheese. Spread mashed potatoes over cheese. Top mashed potatoes with the stuffing mixture.
Bake 45 minutes in the preheated oven.

  1. Sounds good! I’m going to try this with lactose free cheese and milk.

  2. We have almost the same Thanksgiving meal! Mine is A LOT smaller though with only 4 mouths to feed. (Maximum 5 if you count my brother’s stomach twice.)

    I’m making turkey. Bacon & Sausage stuffing. Gravy. Mashed potatoes. Cranberry Sauce. Apple Pie. And Green Beans.
