Weekly Menu ~ January 23, 2011

Hey folks!  It’s one of those stay inside and stay warm kind of days today.    The weather channel says it’s -28 C today with the windchill (that’s -18 for my American friends!).  Amy and Shane cleaned the kitchen this morning, now Amy’s having a nap and Shane is downstairs putting drywall up in Austan’s new bedroom in the basement.  I am busy cooking dinner for tonight and watching “Cats and Dogs” on the TV with the kids. 

As I wrote yesterday, we need to do some belt-tightening in the next few months.  We scoured the pantry and the freezer for what we had on hand to make the menu for this week.  So, without further adieu, here it is:

Sunday ~ Skinny Italian Spinach Meatballs *  in Sauce over spaghetti

Monday ~ BBQ Baked Chicken drumsticks, Noodles and Sauce, Veggies

Tuesday ~ Back Bacon Roast, Potatoes, Cauliflower

Wednesday ~ Perogies, Polish Sausage, Coleslaw

Thursday ~ Beef, Potato, & Quinoa Soup with Homemade Bread

Friday ~ Spinach & Bacon Quick Quiche, Salad

Saturday ~ Prime Rib Roast**, Roast potatoes and carrots, Yorkshire Pudding

* I quadruple the recipe for this and freeze some for Andrew’s birthday dinner on February 4th

**we found a 3lb roast marked down at the store for about $7.00.  My boys are going to their dad’s place, so the roast is just enough for the 6 of us remaining (Evan goes to his grandparents every Saturday).

  1. Glad you were able to figure out where to cut corners! I find the food category is usually a good one to trim when you have to!

  2. Mmm. Roast Prime Rib! My favourite! Good deal on the prime roast. They’re so pricey!!
